Matzo beer

Just when you think every ingredient under the sun has been used in craft beer along comes “Matzahbrau” from Ambacht Brewing of Hillsboro, Oregon.

Using Matzah (Matzo), a cracker-like unleavened bread made of white plain flour and water. Two pounds of Matzah is used in a 20 pound grain bill for this brew.

Then the beer is bottle conditioned with honey. So this might be a sticky sweet little bomb of a beer. Can’t wait to try it.

  1. This is not a sweet beer! It pours crystal clear with a touch of wheatiness from the matzah — I can even taste the little burnt parts.

    All of our beers are designed to be dry with moderate hops to bring out the flavors produced by our Belgian yeasts. The honey is used for bottle conditioning and gives a hint of sweetness in all of our Belgian-inspired ales. The big batch we made this year has over 25 lbs of Matzah added to our 4 barrel batch.

    Finishing gravity was 1.005.
