Blending in a Shack

I don’t know much about Shacksbury and their cider but if they have the confidence of Beachwood Blendery, then I will be interested int the pair of blends being released, tomorrow, Thursday, October 3rd.

Here are the details, “Introducing Imaginary Apples and Imaginary Apples Rosé! Starting with wild foraged Vermont apples that went straight from trees into the press, and then allowed to naturally ferment using native yeast in early November 2016 as part of Shacksbury Ciders Lost Apple Project. The culture from that was sent to us after fermentation had been completed and used to to inoculate our wort in September 2017. After 16 months in barrels a portion of the blend was put on second use zinfandel grapes to extract a bit of color and flavor. Both blends were packaged January 2019 and left to bottle condition and age for 8 months.”

1-2-3 Gueuze


Ever since the Blendery side of Beachwood Brewing started, the clock has been running for the three-year mark. That is when they could produce their Long Beach version of a traditional Belgian-style Gueuze with a blend of 1,2 and 3 year old beer.

A Promise


The collaborations of 2018 continue at what I think is a blistering pace with one that just by hearing the participants names, I know I will look for it. Beachwood Blendery + Garage Project. Need I say more? Well, OK it is a Belgian style beer with buckwheat aged in oak barrels with strawberry and rhubarb.

We All Float


As much as I like the few “Be Careful Eugene” fruited sours from the Beachwood Blendery, I like their forays into dry hopped and oak aged tartness more. And the chosen hop for Floating in Space, Mandarina Bavaria should add some nice citrus to the mix.

Coolship LBC


The Beachwood Blendery has taken a measured and well-planned out approach to creating their wild and sours and lambic beers. And the next step is for them to release their first 100% spontaneously fermented lambic inspired ale.

Coolship Chaos 2017 is a blend of the best barrels from our 2015-2016 coolship season. Why a season? Because due to weather and temperature, there are only small windows from which to let the “wild air” in and have it hit the wort just right.

And the hard work didn’t stop at meteorology. BB put together “a traditional grain bill of pilsner and unmalted wheat, a multi-step mash, long boil with aged hops…” Then they had to find which barrels should be used for this batch, which would get fruit added to them and which wouldn’t.

Then….”No bottle conditioning yeast was added to the bottles on this run, only priming sugar, to achieve a natural refermentation in the bottle. The beer then sat in our warm conditioning room for five months until fully carbonated and up to our standards of taste, completely ready for your drinking pleasure.”

Good Fortune

It has taken 18 months of brewing, aging and blending but we all knew the time would come when the Beachwood Blendery and The Propagation Series started making way for lambics and that time is starting with Fortune Favors the Funk, a ‘Lambic inspired’ ale which will drop on Friday, June 24th during L.A. Beer Week.

Working with Sierra Nevada in the tasting and blending phase + the Ex-598 hop from Sierra Nevada experimental team has led to….

“Fortune Favors the Funk was brewed with traditional lambic ingredients; pilsner malt, unmalted wheat and aged hops boiled for three hours. The base beer was fermented in neutral oak barrels and aged for almost a year. After blending, the beer was dry hopped with ex-598 hops, bottled with wine yeast, and allowed to condition for over two months. Fortune Favors the Funk has a classic rustic profile balanced with solid acidity, full body, and clean finish.”
